I needed a quick "dessert" and came across this recipe for Chocolate Pumpkin Cookies using a cake mix and thought I'd give it a whirl. The original recipe was simply one box chocolate cake mix + 1 can pumpkin puree but I changed it up a bit.
- 1 box chocolate cake mix
- 1 (15 oz) can pumpkin puree
- 1/2 cup coffee
- 1/2 cup oats
- 1/2 cup chocolate chips
- 1 teaspoon vanilla
Directions
- Throw everything in a large mixing bowl, stir until thoroughly combined.
- Spoon into baking sheets and bake at 350 degrees for 12-15 minutes. Let cool on cookie sheet for 5 minutes before removing to a cooling rack.
