Menu 2016: March 7- April 3

I ended up getting a nasty bug at the beginning of February and was sick for several weeks so I am behind on whole bunch of stuff (including posting menus). Thankfully, the hubby and kids have been a HUGE help while I was sick. After a round of antibiotics, probiotics, vitamins, some OTC meds, lots of hot tea, and doing my best to get rest (I know, how is that possible with 4 kids?), I am finally on the mend and starting to get caught up on things. AND I have the menu finished. :)
March 7-13
  • Fettuccine with chicken and roasted garlic cream sauce, steamed green beans, side salad, and chocolate cake (I had to go for a 3 mile run to earn it but it was good)
  • Biscuits and gravy, scrambled eggs, and 
  • Chicken sweet potato stew
  • Cheese burgers, sweet potato fries, mixed veggies, and a side salad
  • Pulled pork and slaw sandwiches, roasted cauliflower poppers, and fruit salad
March 14-20
  • Dahi chicken with dal and brown rice
  • Breakfast skillet (hashbrowns, veggies, eggs, and cheese)
  • Pork salsa verde with quinoa, steamed veggies, and salad 
  • Pizza and a side salad
  • Carne Asada, black beans, and rice
March 21-27
  • Tacos and black beans (National Crunch Taco Day on March 21st)
  • Blackened chicken and dirty rice
  • Omelets, potatoes o'brien, and fresh fruit
  • Red beans and rice
  • Rotisserie chickens, garlic herb polenta, steamed mixed veggies, side salad, and cheesecake
March 28-April 3
  • Texas caviar casserole
  • Chicken pot pie
  • Meatloaf, cheesy potato casserole, and steamed veggies
  • Chicken and black bean quesadillas
  • Spaghetti and meatballs, steamed veggies, and side salad
