Microwave Blueberry Oat "Muffins"

My 1st Attempt
I am always up for quick, easy, and healthy dishes for breakfast or snacks so when I happened upon a recipe for 1 Minute Berrylicious Microwave Muffin I decided to try it.
The original recipe went like this:
  • 1/4 cup quick oats
  • 1 egg (sub. 1/4 egg beaters for less calories)
  • small handful of blueberries
  • little bit of brown sugar/stevia (optional)
  • tbsp soymilk or regular milk (for added moistness!)
Mix it all up into a coffee mug! Put it in the microwave for 1 minute, make sure it doesn’t overflow! Add an extra 30 sec if it needs to firm up. Enjoy!
All the ingredients and 4 mugs of "Blueberry Oat Muffins"
Getting all the ingredients together

I decided this morning for breakfast that it was time to give this recipe a try. So the kids and I took all the ingredients to the dining room table and threw these together.

This is what I did first (and yes, I did try it another way):
  • 3 tablespoons quick oats
  • 1 tablespoon AP flour
  • 1 egg (sub. 1/4 egg beaters for less calories)
  • 8 blueberries
  • 1 teaspoon brown sugar/stevia (optional)
  • 1/4 teaspoon baking powder
  • pinch of salt
  • dash of cinnamon
  • 1 tbsp skim milk
Mix it all up into a coffee mug! Put it in the microwave for 1 minute, make sure it doesn’t overflow! Add an extra 30 sec if it needs to firm up. Enjoy! Now this first attempt was REALLY eggy in flavor, which wasn't bad but not my favorite.

Miss E eating hers
So I tried it one other way:
All the dry ingredients in the mug
  • 3 tablespoons quick oats
  • 2 tablespoons AP flour
  • 1 tablespoon unsweetened applesauce
  • 12 blueberries
  • 1 teaspoon brown sugar/stevia (optional)
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon of cinnamon
  • 3 tablespoons skim milk
Mix it all up into a coffee mug! Put it in the microwave for 1 minute, make sure it doesn’t overflow! Add an extra 30 sec if it needs to firm up. Enjoy!

My 2nd Attempt

The flavor on this was pretty good but it definitely wasn't really a muffin texture. I was a little more like a baked oatmeal. The kids enjoyed it and it was pretty filling for only being 144 calories per "muffin".
