White-Bean Stew With Pasta

I happened to see this recipe in Parents magazine (October 2011, p. 168) and thought it looked delicious. Can't wait to try it!
  • 3 cups cooked white beans in cooking liquid
  • 2 tomatoes, chopped (2 cups)
  • 1 1/2 cups water
  • 1 cup dried ditalini or other small pasta (I'm planning to use Orzo)
  • 2 cups arugula
  • 2 teaspoons balsamic vinegar
  • Freshly ground pepper
  • Grated Parmesan cheese
Directions
In a large saucepan bring the beans, tomatoes, and water to boiling. Add the pasta and simmer, uncovered, according to pasta package directions, stirring frequently. Remove from heat. Add the arugula, vinegar, and pepper to taste. Serve topped with cheese. Makes 6  servings.
