S'mores [Layer] Cake

My youngest two girls and I decided we wanted to try something new for dessert on Father's day this year so we came up with this recipe. I made it into a layer cake on the test run, but I would probably go with a simple 9x13, one layer version next time to save time. I may also come up with some other options to make it look a bit prettier in the future.
After making this, I searched online to see if I could put the whole cake under the broiler to give it that toasted look of a roasted marshmallow. I found that you need a cooking torch, but I also saw a s'mores cake recipe that used a graham cracker cake and added whipped chocolate ganache between the layers. I may have to come up with a recipe for graham cracker cake now... 😁

Peaches'n'Cream Tart


We made spinach, ham, turkey, egg, and cheese hand pies for brunch as a family yesterday. Since we're all "stuck" at home together with the "Safer at Home" order in place I figured that we might as well sleep in and then make brunch together. Jared made the filling because he's fantastic at making eggs. Each of the kids took turns helping fill, seal, and brush the pies with egg wash. Then we ate them together with the leftover filling.

While we were working on brunch, Miss E (my almost 12 yr old) decided that we needed a fruit version. I didn't have enough pie dough ready to make a bunch more hand pies so we decided to make a tart instead. Here's what we did.

Skillet Brownie for Two

A couple of weeks ago, we needed a little "date" so we enjoyed "Dessert at 9pm" (which is similar to my "Dinner at 8pm"). I brewed some hot tea (as I was coming down with a cold) and made this yummy brownie for two in a cast iron skillet. I had seen a low-carb version of this on Pinterest and decided to make my own version (mostly because I was out of almond flour). It was a simple and delicious little treat to enjoy in the quiet after the kids were asleep. Enjoy!

[Gluten Free] Chocolate Zucchini Cake

There are days where I almost feel as if I've got zucchini coming out my ears so I've been working on recipes that use zucchini. I've substituted shredded zucchini for the spinach in my baked meatballs, made up a roasted veggie pasta dish with zucchini, and even made a GF blueberry lemon zucchini cake with lemon cream cheese frosting (which is SO delicious and you can't eve tell that it's GF). When I signed up to bring snacks for a fundraiser, I just knew that I needed to try something with zucchini. Since the fundraiser was a bike ride with three different options (10 mile route, 20 mile route, and 40 mile route), I needed to make a carb-loaded finger food. I opted to play around with my blueberry lemon zucchini cake and make chocolate zucchini cupcakes. Sorry that their isn't a picture but I forgot to take pictures before the fundraiser and they were gone afterward. I will try to get pictures the next time I make it! :)

It's blueberry season around the midwest and zucchini season will be here soon enough. I know I need to finish using up the stuff that is in the freezer from last season as I'll have to make room for this year's harvest. Now, I should probably tell you that I adore anything with lemon - pies, puddings, cakes, etc. I don't think I've ever tried something lemon without loving it. With that in mind, when several of my friends posted a link to I am Baker's blueberry zucchini cake with lemon buttercream on Facebook I knew that I needed to try it.

[Gluten Free] Blueberry Balsamic Chocolate Cake

The hubby and I really enjoy to cook for and entertain friends, and tonight was no different. We had a
childhood friend of Jared and his sweet fiance down for fittings, a visit, and dinner. They have changed their lifestyles and eating habits in a way similar to us so we wanted to make something delicious and low-carb for both dinner and dessert. We served grilled tuna steaks (chicken for the kids) with mango pineapple salsa and wasabi, wild rice medley, and a garden salad for dinner. It was so good, mostly because my hubby was in charge of the proteins. Miss. E. helped me prep the salad and wild rice medley early in the afternoon so that my portion of dinner prep would be done in advance. That way I could focus on wedding gown and tuxedo fittings, which I think I enjoy a little too much. :)
I knew dinner wouldn't be difficult to do low carb and low calorie, but dessert tends to present more challenges in regard to that. We got some beautiful balsamic vinegars from Fat Louie's while we were on our 10 year anniversary getaway last October and I have been dying to try them in dessert. I looked up a few low carb chocolate cake recipes (because chocolate and balsamic pair really well together) but none of them were just right so I went to the kitchen to play like a mad cooking scientist. :) What I came up with was absolutely delicious. It was decadent, yet it didn't leave you with that feeling in your stomach like you overdid it. The cake was almost fudgy in consistency yet not overly sweet, the blueberries added a nice pop of freshness, and the chocolate balsamic glaze gave it the perfect balance of bitterness, sweetness, and tang to cut through to creamy cake. The best part of all was that it was simple to make. Here's what I did...

Pumpkin Cinnamon Rolls

I love making cinnamon rolls and I love making anything with pumpkin this time of year (I know you've all been inundated with pumpkin recipes, but what's the harm in just one more). I've made Pumpkin Spice Bread Bites with spiced cream cheese dip and they turned out absolutely deliciously but I decided to attempt my own recipe for pumpkin cinnamon rolls. They were super yummy!

[Gluten Free] Pumpkin Cake with Salted Caramel Cream Cheese Frosting

I love fall. In fact, it is my favorite season. I love the crisp, cool air and the changing colors. I love the foods - chilis, soups, pumpkin anything, apple anything, hot chocolate, etc. I enjoy hayrides and visits to the apple orchard. When it comes to fall, you name it and I probably really enjoy it. Loving fall made this recipe a no-brainer for me. Who doesn't love pumpkin and cream cheese? Who wouldn't enjoy some salted caramel along with it? I know, I'm probably making you salivate. So here you go. You're welcome. :)

Peanut Butter Cookie Dip

Apparently, the kids enjoyed it. :)
I love "dessert" type dips with my apple slices (or celery), but a lot of them are high in sugar and thus high in carbohydrates. A couple of months ago I attended a meeting with a dietitian and she suggested this as a good low carb substitute to caramel dip. This dip is low carb, gluten free, and can be made sugar free. Plus, it helps that it's delicious.

[Allergy Friendly] Coconut Minis

With so many of my favorite (non-familial) people being gluten free, I've been looking for some new recipes to have on hand in case of company. I am a big fan of coconut, which made my choice of flour an easy decision. I've done a little experimenting with coconut flour and it is a very absorbent flour. You need to bring a ton of "moisturizers" to the party or the coconut makes it really dry. I did some peeking around and found a cookie recipe that sounded interesting so I decided to give it a try. I did make a few adjustments since I just can't leave well enough alone. :)

[No sugar added] Tropical Yorbet

The other day I was cleaning the kitchen and came to the realization that my pineapple and two
mangoes were getting dangerously close to overripe. I didn't want a smoothie because I prefer my smoothies with banana in them and I was out of bananas. A fruit salad wasn't sounding terribly appealing to me either. I decided to grab my blender and ice cream machine from the cupboard and play. I tossed in the mangoes, half the pineapple (I let the kids munch on the rest), a cup or so of coconut milk, and 16 oz. of plain Greek yogurt (although vanilla would go nicely as well).

Chocolate Lovers' Cake

This is by far my favorite chocolate cake recipe. I use it for birthday parties all the time. It's moist,
flavorful, and so much better than store bought without taking a ton of time to make. It also uses ingredients that most people have in their pantry.

Bitter Blanc Marbled Cheesecake

We love date nights, but then I think every parent enjoys a night out away from the chaos that comes with raising children. With that in mind, Jared and I decided to plan a date night activity for our "Homebuilders" Sunday school group (those who are engaged, newly married, or married with minor children at home). I enjoyed hunting down recipes and deciding on a menu for the evening. We wanted to plan an elegant dinner with salad, appetizers, fresh bread, main entrees, sides, and, of course, dessert. I LOVE to bake, which might be a reason why I still struggle with my weight. :) Anyway, I decided that one of the desserts needed to be a chocolate marbled cheesecake. So I tweaked my regular chocolate cheesecake recipe and it turned out AMAZING! It was rich, silky, chocolaty, and delicious.

Christmas Banquet 2013

Jared and I had the privilege of planning our church's yearly Christmas Banquet. I thoroughly enjoy planning, decorating, and cooking for banquets and things so I was really looking forward to doing it. We planned our previous church's Valentine's banquet almost every year that we were there and found that we worked well as a team. This is the first year that I have also had the opportunity to prepare the food besides planning and decorating. I had some awesome help in every aspect so I don't suggest trying to pull something like this off unless you can recruit some help at every stage.

Salted Caramel Sauce

It all started out because of Starbucks' Salted Caramel Latte. Everything went downhill from there. I love caramel, BUT adding salt to it really takes caramel to a whole new level. I'd made homemade caramel before so I figured I could learn how to make salted caramel. I decided to play around with this recipe from Cooking Channel and it came out absolutely delectable!

Grilled Chocolate Cake

We were having another "Dinner at 8pm" and I decided that I wanted to make dessert on the grill so I made up my mind to attempt chocolate cake and the grill. It turned out lovely and we enjoyed it with some homemade vanilla frozen yogurt. It didn't take very long to whip together either, which is always a perk!

Grilled Honey Cinnamon Plums

This is such an easy and delicious dessert to make on the grill while plums are in season. Top your freshly grilled plums with homemade whipped cream, vanilla frozen yogurt, or lowfat ice cream.

  • Plums (however many you what to make, you can get about 4 thick slices out of one plum)
  • Cinnamon
  • Honey
Directions
  1. Sprinkle plum slices with cinnamon, then drizzle with honey. 
  2. Place on the grill and cook for 3-4 minutes each side. Serve warm with any of the above mentioned toppings.

Salted Caramel Bacon Ice Cream

Today was Battle: Bacon for our Homebuilder's Group (young married couples and families with minor children) at church. Everyone was to bring a bacon dish(es) for a fellowship dinner/food competition. I wanted to be as creative as possible so I decided to make a caramel ice cream and use bacon instead of nuts (kind of a twist on a maple nut or butter pecan). I got on Pinterest to see if anyone else had done something similar and found several recipe ideas. I wandered through each of the recipes and picked out my favorite ideas. It turned out great and even won best overall bacon dish. It combines a couple of opposites, sweet'n'salty along with smooth'n'crunchy, and it is also a VERY decadent dish so you can only handle about 1/2 cup before the richness overtakes you.

Dinner at 8pm: September 2013

$40 or so for a sitter. 
This summer has been so incredibly busy that we've had no time for date night "in". With school starting, and the craziness it brings, I decided that Dinner at 8pm was a must! I love how it gives time to cook and chat with each other (without interruption) on a completely different level than when the kids are awake. I will also admit that I enjoy the fact that it's way more economical for us than hiring a sitter and paying for dinner, dessert, and coffee. On September 13th, we will put the kids to bed a little early, make ourselves a delicious dinner, and enjoy some time together without breaking the bank. :) Here is our delectable menu for the evening. By the way, everything except the rice and frozen yogurt will be prepared on the grill so the kitchen will be quiet, which helps the kids to fall asleep faster.
