How is Thanksgiving already upon us?!? This year is flying by and I often feel like I just can't keep up. The last week in October was a crazy one, which is why I am really late on getting this posted. All in one week my hubby was out of town 3 days for work, my computer died, and our van broke down. BUT I did get a wonderful time away with my hubby for his birthday and our anniversary. My aunt came down and stayed with the kids for a couple of days and it was fantastic! When we got back my hubby got the van up and running again (starter + battery), and got a new computer ordered for me. I could get away without one for longer if I didn't have to have it for homeschooling and work. Anyway, here is what I've got planned for for suppers over the next month.
As a busy wife, small business owner, and mother of 4 small children, I develop weekly menus to help keep myself on track. Apple Pork Tenderloin and Baked Potatoes
I made this delicious dish for my hubby's birthday on this year. It was super easy to throw together and cooked up nicely with baked potatoes on either side of my roaster in the oven.
Instant Pot Venison Roast
We love venison. It's a great, iron-packed, lean meat, but it can be difficult to cook. I always struggled with getting that perfect venison roast. You know, the one that's tender and flavorful. My hubby isn't a fan of roasts normally so I usually cut mine up into "steaks" for slow cooker carne asada or into cubes for peppery beef sandwiches.
My aunt came and stayed with us for a few days and brought a venison roast as my uncle is trying to get the freezer cleaned out before hunting season begins again. I decided to make it for supper one Thursday and wanted to try it in my Instant Pot. It turned out beautifully. Everyone had seconds, which is almost unheard of, and my hubby raved about it.
