Menu 2018: January 28-February 24

How is January almost over?! We are working at getting back in the swing of school, which is easier for some kids than others. We have had lots of cold days without much snow so the kids are praying for more snow, which I don't mind. I'd rather have snow than below zero temperatures any day!
I am attempting to do a better job at getting menus for the month done on time as it helps me stay on track both with my calorie intake and my food budget. Here is what I've got for February.
January 28-February 3
  • Venison roast, mashed potatoes, and mixed vegetables
  • Chili
  • Breakfast croissants
  • Pretzel dogs, mac'n'cheese, and steamed broccoli
  • Tater tot casserole
  • Meatloaf, roasted potatoes, and mixed vegetables
February 4-10
  • Pork Salsa Verde, beans, and rice
  • Western omelets and American fries
  • Brats, barley, & saurkraut with green beans (mac'n'chees for the kids instead of barley and kraut)
  • Ravioli with alfredo, Italian sausage, and broccoli
  • Waffles and scrambled eggs
February 11-17
  • Pulled pork & slaw with cheesy hashbrown casserole
  • Lazy day casserole
  • Chicken fried rice
  • Happy Valentine's Day - "steaks" (roast that I got on sale and cut into "steaks"), baked potatoes, roast brussels sprouts, and chocolate sourdough cake with peanut butter frosting
  • Jambalaya
  • Leftover steak and egg bites
February 18-24
  • Carne asada, beans, and rice
  • Grilled cheese and tomato soup
  • Sausage, veggie, and pasta casserole
  • Pancakes, eggs, and bacon
  • Black bean soup
  • Nacho Night
