The original recipe went like this:
- 1/4 cup quick oats
- 1 egg (sub. 1/4 egg beaters for less calories)
- small handful of blueberries
- little bit of brown sugar/stevia (optional)
- tbsp soymilk or regular milk (for added moistness!)

I decided this morning for breakfast that it was time to give this recipe a try. So the kids and I took all the ingredients to the dining room table and threw these together.
This is what I did first (and yes, I did try it another way):

- 3 tablespoons quick oats
- 1 tablespoon AP flour
- 1 egg (sub. 1/4 egg beaters for less calories)
- 8 blueberries
- 1 teaspoon brown sugar/stevia (optional)
- 1/4 teaspoon baking powder
- pinch of salt
- dash of cinnamon
- 1 tbsp skim milk

So I tried it one other way:

- 3 tablespoons quick oats
- 2 tablespoons AP flour
- 1 tablespoon unsweetened applesauce
- 12 blueberries
- 1 teaspoon brown sugar/stevia (optional)
- 1/4 teaspoon baking powder
- 1/4 teaspoon of cinnamon
- 3 tablespoons skim milk
Mix it all up into a coffee mug! Put it in the microwave for 1 minute, make sure it doesn’t overflow! Add an extra 30 sec if it needs to firm up. Enjoy!
The flavor on this was pretty good but it definitely wasn't really a muffin texture. I was a little more like a baked oatmeal. The kids enjoyed it and it was pretty filling for only being 144 calories per "muffin".
