I came up with this recipe as a side dish for my soup and sandwich combo (
Mediterranean Chicken Wraps).
- 1 tablespoon olive oil
- 2/3 cup sliced fresh mushrooms
- 1 clove garlic, minced
- 1/2 a medium onion, chopped
- 1/4 cup chopped red bell pepper
- 1 1/2 cups beef broth
- 1 teaspoon soy sauce
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 3 handfuls of fresh spinach leaves (about 2 cups)
Directions
- In saucepan, heat oil, add mushrooms, garlic, onion, and pepper. Sauté until onions are translucent (5-8 minutes).
- Add salt, pepper, beef broth, and soy sauce. Simmer for 5 minutes.
- Add spinach and stir until coated with broth. Cover and simmer for another 5 minutes. Remove from heat and serve.
You can also add carrots and celery if you prefer.
