Jared promised the kids a treat if they finished their supper last night. I had a few different things that I could make so it wasn't a problem until the kids couldn't agree on which treat to make. Their options were trail mix,
granola bites, or
chocolate chip cookies and they all wanted something different. Then I had an idea, why not try to combine the flavors from all three into one - chocolate chip cookie dough with the addition of oats, coconut flakes, craisins, and crushed peanuts. The kids named this creation "trail mix cookies".
- 3/4 cup butter, softened
- 1/2 cup vegetable oil
- 1 cup white sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 1/2 teaspoons vanilla
- 1/2 cup coconut flakes
- 2/3 cup crushed peanuts
- 2 1/2 cups all-purpose flour
- 1 1/2 cups old fashioned rolled
- 4 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup semi-sweet chocolate chips
- 2/3 cup craisins
Directions
- Preheat oven to 325 degrees.
- In large mixing bowl, cream butter, oil, sugars, eggs, and vanilla. Add peanuts and coconut flakes.
- In medium mixing bowl, combine flour, oats, baking powder, baking soda, and salt. Add to creamed mixture 1 cup at a time.
- Stir in chocolate chips and craisins. Scoop dough onto baking sheets. Bake for 8-10 minutes (DO NOT bake for more than 10 minutes or they'll burn). Remove from oven and let rest on baking sheet for another 5 minutes (the cookies will finish cooking during this time), then place on a rack to cool.
