- Tater Tot Casserole Skillet - Did you know that Groundhog's Day (2/2) is also National Tater Tot Day? I didn't either, but it works perfectly with my theme for quick and simple meals.
- Carrot Cake Pancakes, scrambled eggs, and turkey sausage links - it's National Carrot Cake Day (2/3) and these pancakes are the perfect celebration meal
- Chicken noodle soup - let's just keep going with celebrations since it's National Soup Day (2/4) and soups in the slow cooker make for great quick, simple, hearty, and delicious meals
- Here's another food holiday for you - National Chopsticks Day (2/6). We're celebrating with one of Miss E's favorites - Sesame noodles with beef and broccoli
- The final celebration of the week, National Fettuccine Alfredo Day (2/7) - fettuccine alfredo, grilled chicken, and steamed broccoli
- BLTA flatbread paninis, fresh fruit, and side salad
- Cilantro Lime chicken and Texas caviar with quinoa instead of rice
- Garlic herb pork loin roast, brussels sprouts, and quinoa and lentil "risotto"
- it's National Tortellini Day (2/13) - Creamy spinach tomato tortellini, side salad, and steamed veggies
- Tex-Mex rice bowl
- 10 Bean soup and corn bread
- Homemade Pizza and side salad
- Grilled cheese and tomato soup
- National Biscuits and Gravy Day (2/21) - obviously, biscuits and gravy with a side of scrambled eggs
- Slow cooker sweet potato, chicken, and quinoa soup
- Red beans and rice
- National Chili Day (2/27) - slow cooker white chicken chili
- Chicken and black bean flatbread sandwiches, steamed veggies, and side salad
- National Potato Lover's Month - slow cooker zuppa toscana and breadsticks
- National Corn Dog Day (3/1) - corn dogs, mixed veggies, and fresh fruit
