Menu 2014: September 1-October 5

It's hard to believe that summer vacation is over and another school year is upon us. The summer has flown by far too quickly for my liking. Sigh. Has your summer gone the same way as mine? Don't get me wrong, we had a very enjoyable summer and did lots of fun stuff as a family, but it just went by so fast.
I've had wedding alterations up to my eyeball the last couple of months and the sewing work doesn't seem to be slowing down much, which is great for bringing in some extra money to pay for school supplies as well as supplement our income. Now there are lesson plans to be gone through and school desks to be organized. I have a crazy schedule over the next month so I need to keep things simple, which is actually quite difficult for me to do as I am known to over complicate things. Just ask my hubby or my good friend Sarah. I plan to throw together a few freezer meals and lots of crockpot or quick and easy dishes. Here's the printable version.

September 1-7
  • Happy Labor Day! Smoked paprika grilled chicken, roasted red potatoes, baked zucchini boat, side salad, and some sort of no bake bars
  • Zuppa Toscana and multigrain dinner rolls
  • Chicken wings, loaded baked potatoes, roasted cauliflower, and side salad (Go Packers!)
  • Caprese chicken with asiago parsley pesto fettuccine and steamed veggies
  • Crockpot "Rotisserie" chicken, mashed potatoes, and mixed veggies
September 8-14
  • Chicken and black bean flatbread paninis and side salad
  • Chicken enchiladas and crockpot black beans - I love that I can just make up the enchiladas in the morning before school and leave them in the fridge till I'm ready to bake, and the crockpot black beans are so quick and simple.
  • Grilled chicken legs, mac'n'cheese, and steamed veggies
  • Homemade Pizza, side salad, and fruit salad
  • Crockpot spaghetti and meatballs (freezer meal), glazed carrots, and side salad
September 15-21
September 22-28
  • Grilled meat (either pork loin or steak, whichever is on sale), roasted potatoes, veggies, and side salad
  • Chicken noodle soup and multi-grain dinner rolls
  • Honey garlic chicken tenders, sesame noodles, and stir-fried veggies (freezer friendly)
  • Dahi chicken, dal, and brown rice
  • Crockpot carne asada, black beans, and brown rice
September 29-October 5

    1. I do have recipes for most of the dishes on this menu, just haven't had time to finish adding the links. I will try to finish adding the links today. As far as grocery lists, I currently do not post my grocery lists because of time constraints.
