- 1 pound ground beef (85% lean)
- 1 green bell pepper, chopped
- 1 cup diced onion
- 3 cups diced tomatoes
- 1 cup chicken broth
- 2 cups beef broth
- 1/2 cup white rice
- 1 packet salsa mix (or make your own with finely diced jalapenos, cilantro, garlic, and onion)
- 1 teaspoon ground cumin
- salt and pepper to taste
- In a large stock pot brown and season ground meat with salt and pepper.
- Drain fat and add all remaining ingredients. Cover and simmer for 30.
